Description
The olive groves are of our property and are located in two different provinces – Livorno and Pisa – and are distant 30 km between them. Situated at a height ranging from 50 meters above the sea level for the olive groves in Bibbona and 500 meters those placed in Montecatini Val di Cecina and
Volterra, our olives enjoy a great isolation in the hills of the two provinces.
Our extra virgin olive oil it’s a blend of three qualities’ of olives: Moraiolo, Leccino and Frantoiano with the addition of Pendolino that serves for pollination.
Before being cold-pressed, the olives are harvested manually directly on the plant during the period between October and the end of November of each year.
Cold-pressing process allows us to maintain unchanged all the characteristics of the oil. Our extra virgin olive oil is fluent, with an intense smell and a medium intensity fruity taste, slightly spicy. However, it has a good balance with the bitter taste of the fresh olives.
It’s 100% digestible and is also indicated for special fried dishes, contributing with its intense aroma. It’s great for salad seasoning, raw fish and raw meats as also for the meat on the grill or barbecue.
