After the 60 days of seasoning, the “Pecorino degliSposiachieves new properties and gives rise to a new cheese: The “Pecorino Volterran red”, which isan historical cheese in the area of Volterra. The special treatment of the crust with tomato & extra virgin olive oilwas done to stop the development of

moulds and thus safeguard the healthiness of the product. Its maturation and organoleptic complexity makes it great as an appetizer paired with vegetables and full-body white wines.

The creamy texture and its sweet taste but still with intense aromas, makes the pecorino “Volterran Red” excellent on the grill.

INGREDIENTS

Raw and organic whole ovine milk, our selection of cow lactic ferments, animal rennet and salt.

The shape: cylindrical with flat sides and rounded edge

The edge height: about 6/8 cm

The sides diameter: about 14 cm

The weight: about 500 grams up to 1,5 kg

The crust: smooth, light yellow colour; after the coating with organic concentrated tomato and extra virgin olive oil, the colour becomes an uneven dark red.

Cheese dough: semi-hard, of light yellow colour with steady medium holes.
