Description
Our ricotta is a dairy product obtained exclusively from the whey of sheep milk with the addition of a small percentage of sheep milk. On request you can also have it with cow milk.
The ricotta is obtained via the heating of the whey. The white flakes rise to the surface while they are collected manually and deposited in perforated conical small baskets known as “fuscelle” to facilitate the
draining of the whey. Soft, delicate and creamy, the ricotta is a light and dietary product.
Excellent as an ingredient in preparation of sweet and savoury dishes, but also by itself, flavoured with coffee powder, honey or melted chocolate.
