IOurTomini are little fresh cheeses obtained from sheep milk enriched with various spices.
Whole ovine milk pasteurized at 72 ° C and then cooled down until reaching a temperature of about 36 ° C.
The cut of the curd is the size of a grain of corn and the addition of the ingredients, such as spelt, hot pepper, black pepper, almonds and truffle, takes place during the cut of the curd.
They are left to age for about 15 days, after which they are stored under vacuum.
Our Tomini are perfect to enjoy just alone, but they give their very best when baked or grilled and accompanied by cooked or raw vegetables. Perfect with light white and red wine
