Traditional Tuscan and Sardinian Cuisine at Fattoria Lischeto
Volterra is famous worldwide for its history as an Etruscan, Roman, medieval, and Renaissance city; for its unique landscape of cliffs, ravines, and terrigenous ditches; and for its traditional alabaster craftsmanship. It is in this context of open territory and cultural richness that Giovanni Cannas has decided to practice his cheese-making activity since 1991 at Fattoria Lischeto, leveraging the experience and traditional knowledge in shepherding passed down through generations.
The transition from Sardinian to traditional Tuscan shepherding was a natural step for Cannas. Organic farming is the foundation of his work, which encompasses not only cheese production but also the cultivation of extra virgin olive oil and pasta. Over time, the farm has been restored to its origins, with the creation of an agriturismo offering accommodation in 5 rooms and 14 apartments inspired by Tuscan tradition. The highlight of the property is the restaurant, or rather the “tavern,” as Cannas likes to call it, located on the ground floor of a fully renovated late 19th-century farmhouse. It has two dining rooms and can accommodate up to 100 people.
Here, visitors can enjoy homely, genuine cuisine, a blend of traditional Tuscan and Sardinian cooking. Locally produced organic ingredients form the basis of the recipes, making it easy to find seasonal, organic, and locally sourced products. The dishes are prepared and cooked exclusively on-site. Many of the raw materials used to cook traditional recipes are also available in the farm’s shop.
